Confectionery

Chocolate degrades quickly under temperature variation. A storage area that swings a few degrees between day and night doesn't just risk product — it shows up as bloom, texture change and rejected pallets, and by the time you can see it the damage is done. Confectionery environments need temperature and humidity held together, continuously, across every zone — because relative humidity moves the moment temperature does, and a system that lets one drift has already lost the other.

Why confectionery is harder than it looks

Temperature and humidity are one problem, not two. Relative humidity is relative to temperature — a wide operating band with rapid temperature swings is the classic failure mode. We control both together, using a matrix of sensors with chill and reheat stages or dedicated dehumidifiers and humidifiers, holding exceptionally tight tolerances through our temperature and humidity control systems.

Different zones, different rules. Storage, production and co-packing areas each have their own conditions — and a system that averages across them satisfies none of them. Independent zone control means each area holds its own specification without bleed from its neighbours.

Uniformity across the whole volume. A cold-spot average is worthless if one corner of the racking sits warm. Balanced JET Technology holds temperature within ±1.0°C across the entire space — floor to ceiling, wall to wall. The auditor doesn't sample the average. Neither do we.

Proven in live confectionery facilities

At DHL's Ferrero Rocher distribution centre at DIRFT, we added high-velocity mechanical cooling to an existing Jet heating installation, holding nearly 15,000 pallets of confectionery within 15°C (±3°) year-round around live high-bay racking. Read the flagship case study: DHL Ferrero Rocher Distribution Centre.

At a confectionery storage and co-packing facility in Derby, we delivered four independently governed zones under one roof — each with its own temperature, humidity and biosecurity pressure regime. Seven Balanced JET systems, a central chilled-water plant and intelligent automation hold the conditions continuously, without an engineer standing over them.

The full engineering story is in the case study: confectionery logistics environmental control. It's the closest thing we have to a walkthrough of how a modern confectionery environment should be built.

The evidence trail, built in

Holding the conditions is half the job; proving it is the other half. Our remote monitoring logs temperature and humidity continuously, raises automated alerts the moment conditions move, and produces compliance reporting without anyone walking the floor with a clipboard.

And because confectionery is a specification business, we design to an agreed performance envelope from the start — the approach behind our compliance and temperature guarantee. If the conditions matter enough to specify, they matter enough to evidence.

Talk to an engineer

What do your products actually need — storage bands, production conditions, the humidity tolerance your quality team signs off? Bring the specification and we'll talk about how to hold it. Call 0121 770 7466 or email sales@jetenvironmental.com.
